Our Winery
Our winery is designed to be both practical and purposeful: a space that supports careful work and calm decision-making.
We have shaped the environment to ensure harvest and élevage run as smoothly and efficiently as possible. Operating off-grid and powered by solar energy, the winery reflects our commitment to efficiency and reduced environmental impact.
Inside, the workspace is ergonomic, spacious, and filled with natural light. Cleanliness and organisation are fundamental to how we work, and the layout is intentionally well-ordered, intuitive, and easy to operate.
Throughout the year, the winery remains cold in winter, cool in summer, and never excessively hot, helping us maintain a stable environment for the wines.
We believe that in a well-designed and efficient workspace, our focus can remain where it matters most: on the grapes, the wines, and the people around them, rather than on overcoming avoidable inefficiencies.
Our Approach
We believe great wine is made through thoughtful decisions, careful handling, and a deep respect for what the fruit naturally offers.
Every parcel is assessed on its own terms, beginning with careful hand-sorting and gentle destemming to preserve fruit quality from the outset. Pressing is tailored to both the grapes and the intended wine style, using basket and pneumatic presses where appropriate.
In the winery, we work with a balance of gravity and pumps, always aiming to move fruit and wine as gently as possible. Protecting freshness is central to our approach, and we take care to limit oxidation at every stage. Sulphites are used judiciously, and we remain open to filtration when it is genuinely beneficial for stability or clarity.
For whites and rosés, we employ cold settling of juice at harvest and allow wines to undergo natural cold stabilisation during the winter months. Fermentations are managed according to the style and structure of each wine: alcoholic and malolactic fermentations typically proceed sequentially in whites and rosés, while in certain reds we delay malolactic fermentation to build resilience and enhance colour stability.
Our approach is guided not by dogma, but by precision, restraint, and the needs of each individual wine.
